I'm trying to type "But sometimes cooking is a process ______ duration is frankly unacceptable" and there's just NO WORD to put there! The closest you could get is something like "which's", which just sounds silly, or "whose", which implies that "cooking" is a person...
You'll notice that I use "in which" throughout my posts quite often. :)
