The Darkmoon Deathmatch will be available while the faire is, which is the first week of each month. There's nothing special you need to do to jump in, as far as I'm aware, and much like the Gurubashi Arena, an NPC will drop a chest off in the middle of the Deathmatch Pit for players to fight over. It's a free for all, so if you jump in, you're fair game.
