Is It possible even if I drop blacksmithing all together and pick it up again to redo the quest and change from Master Axesmith to Master Swordsmith or Master Armorsmith etc..?

I don't believe this is possible currently, but we should be adjusting it so that you can switch specializations in the expansion.
