I made a 7 onion soup over the weekend that turned out fantastically good. Did the whole French Onion bowl thing with the crusty bread topping the soup with a bit of Parmesan and Mozzarella melted under the broiler.

Original recipe is an Emeril though I made some tweaks along the way.
7 Onion Soup
-------------------------
4 TB unsalted butter
4 slices of bacon.
1 large yellow or Spanish onion (sliced)
1 large red onion (sliced)
1 large white onion (sliced)
1 cup of sliced shallots
1 cup sliced leeks, bottom, well rinsed.
1 cup sliced scallions (lower section mostly whites)
1 bay leaf
1/2 tsp dried thyme
2-3 dashes of Worcester sauce
1 TB soy sauce
1 cup of heavy cream
1/3 cup flour
2 quarts beef stock
1/2 tsp salt and pepper
Shaved Parmesan, for garnish.

Add butter and bacon to a stock or other large pot, render fat and cook bacon until crisp. Remove bacon and save for garnish... or BLT's while you are cooking the soup. :D
Add to the stock pot all the yellow, red and white onions, shallots, leaks and green onions plus salt/pepper, thyme and bay leaf. Cook for 10-15 minutes on medium heat, stirring often, until onions have caramelized.
Add flour, cook for 2-4 minutes, until light golden.
Add stock and bring to a boil. Reduce heat and add the Worcester sauce and Soy sauce. Let simmer for 45 minutes.
Add the cream, and salt and pepper to taste.
