You can log into your Battle.net Account Management page and cancel your reoccurring subscription. When you decide to rejoin the World of Warcraft, then log back into the aforementioned page, apply some method of payment to your account, and you can continue right where you left off.

Characters and items will not be lost due to account inactivity, but please keep in mind that any active auctions and mail will continue to expire as they normally would so I would recommend collecting those before leaving.

I'm afraid that any pre-paid time you've already purchased, though, is non-refundable and will continue to expire as normal.
