I noticed in another forum that Orlyia had posted a small section about how to check the headers on emails. And yes I know there are a ton of email sites out there.
But why don't we have a sticky with even those few details that was posted there for the people who do not know how to check the headers?

That varies quite widely based on the email program in use, Zar. Hopefully everyone learns how to do it on their favorite email reader :)

It is VERY handy to know, not only for your WoW account - but in general. WoW accounts certainly aren't the only thing that phish attempts on the net. I've received them from people claiming to be my bank, my credit card company - Fed Ex seems popular as well.

I got two very recently for a game I've never played or had an account on.

That's why these are called phishes :) HAD I played that game, those would have been dangerous.

Dealing in illicit virtual goods is a multi-BILLION dollar a year business and the vast majority of their 'goods and services' are stolen goods.

Everyone needs to be careful out there!
