Engineering/skinning/mining should be shared

Icehowl will often drop 20+ leathers, and some times even an arctic fur, and some times in instances there is a node and you can mine it. I think a great change to this game would be when a skinner skins ice howl, a miner mines that node, it should be auto-rolled by the whole group. The way I see it, we all worked hard to down ice howl, we all worked hard to kill the mobs standing in the way of the node, and I think everybody should get a chance at that leather/ore

There are no plans at the moment to further change this system for the 3.3 content update. Allowing everyone in a group to roll on Engineering, Skinning, or Mining materials is something to consider, however, it's worth noting that -- against these three professions -- Enchanting is unique. The majority of characters have little need for the services of a Leatherworker, Engineer, or Blacksmith, whereas everyone needs enchants. As far as Jewelcrafting goes, Enchanting materials saturate the market much more from dungeons than Mining materials do. There are very few Mining nodes in Wrath of the Lich King Heroic dungeons.

There's still a major distinction to be made between the standard gathering professions, and a profession that is essentially two-in-one. Enchanting is a gathering and trade profession. I'm surprised more Tailors aren't demanding to be able to keep all of the cloth that drops in dungeons, but then I guess it's change that people admonish more so than consistency.

Guilds can use proper enchants as a prerequisite to joining but that doesn't mean a player NEEDS them to play the game. If the player wants to do these things, that's a choice they have to make but at no point is the game unplayable if you don't have gear enchanted. If this were the case, most of the players currently raiding would have never done so since they most likely weren't putting top-end enchants on every new piece of gear they gained, yet they got to 80 just fine without them.

It's fine if you want to argue semantics, but it doesn't refute my points or the points many others have made in this thread when it comes to trying to cleanly compare Enchanting to other professions.

Incidentally, I keep wanting to bring this up, but don't because I'm not sure if I'm not remembering correctly, but...

Prior to WotLK, there were often locked chests in instances. Obviously to get at the contents of these chests you either needed a rogue, BS with keys or engineer with explosives. But what I seem to recall was that once the chest was open, if there were any greens or blues in them, the group was presented with a roll window to roll on the item. Am I remembering that wrong? And if I am not, I don't ever recall rogues/blacksmiths/engineers being outraged over that dynamic either.

With regards to the topic at hand, that's one of the reasons you don't see such chests in Wrath of the Lich King. :)
