I would like to know if there is a way to check what quests I have done/still need to do in order to get my mechanical chicken. I may have done some long ago, but I've done over 3000 quests in the game and have no idea if I've completed this or not. Any way to help me on this? Thanks for your time.
Tanaris has been started, you need to head back to that chicken and finish the escort.
Not seeing Hinterlands or Feralas yet.

Could I possibly know which of the three escort quests I have completed on this character as well as on Abacab on Kargath? Thank you. :)
Terribly sorry about that, sometimes these threads slip to the back and aren't seen.
Secretworld has finished Feralas and started Tanaris. Tanaris needs the escort completed. Not seeing Hinterlands started yet.
Abacab only lacks Feralas.

Furybringer – Hinterlands, you need to finish the escort portion. Feralas has not yet been started.
