Achievements are Blizzard's excuse not to work on developing new content.

They can just point to 10man Sarth+3 and Heroic : Glory of the Raider and say

"You should still keep playing your monthly fee to play the same content over and over again because you haven't achieved everything yet."

There is a great deal of new content coming, with some very exciting things in 3.1.0, beyond what we've even discussed/released. Achievements are a fun addition to the game for many players. Those that don't enjoy them, don't have to work on them. As far as your example, even if we had never introduced achievements, there would still exist additional rewards for killing Sartharion with multiple drakes up.

You'll see more of that sort of thing in Ulduar.
