Fun fact - did you know that not too long ago, some major chocolate companies tried to lobby the FDA to change the definition of 'chocolate' so they could substitute hydrogenated vegetable oil for the cocoa butter in their products, but still sell them as 'chocolate'?
Fortunately, the FDA sided with gastronomes everywhere, and denied them.
