If you purchase the Wrath of the Lich King Standard Edition and use it to upgrade your account, you'll be able to upgrade the account once more to make it a Collector's Edition account. To do this, you'll simply want to enter the Collector's Edition key into the Account Upgrade page (https://www.worldofwarcraft.com/account/upgrade-account.html). Please be aware, however, that this will use both Authentication Keys and prevent them from being used for any other accounts.

Ultimately, the choice is yours, but now you know how to go about upgrading your account to Collector's Edition after already using the Standard Edition to upgrade your account. :)
