The Achievements tab has all of the achievements categorized so that you can go take a look at how close you are to completing the achievement.

You should be already able to test this out on the PTR.

Or even have something like wowarmory.com where you can log in to view all the possible quests you have and have not completed.
What you see is what you'll get in that regard. :) I've never particularly been the completionist sort, but this has definitely gotten me to making plans on getting all of these achievements completed.
Then once you've done that, you can brag to all of your friends and compare them sort of like the old card game "Go Fish"...
"You got any Shadow of the Betrayer?"
"No, go fish."
"I already have Grand Master in that."

Neth, will they implement a way to view which quests you have yet to complete per zone, so it will be easier to hunt down those last few quests you need for the acheivement? :)
Not as far as a large list for you to view. You'll have to travel to the region and look for the quests (which can be tracked via the option in the Achievements tab).
