Random loot in instances? Really?

Just wondering if anyone else has the same experiences regarding loot as my guild seem to...

On Thursday we did OS 10, VoA 10 (both bosses) and Ulduar 10: 6 bosses down. (not bad for a first serious attempt with time constraints of "normal" working people!)

Now my issue comes with "random" loot - we got not one cloth/caster drop in the complete run, in-fact all that did drop was Hunter and Rogue gear, with one piece of Warrior tier gear from Emalon. We had no Rogue, Hunter or Warrior in the raid. We had 1, just 1 trinket drop that our healing Druid could use.

I know it's easy to seem hard done by when this happens but does anyone else feel it happens too often? I made a concious mental note of all the drops after getting basically nothing in my last few weeks of raiding on my Mage or Warrior - of course drops for the class I wasn't using did come, with no-one else in the raid of the right class to pick them up... (We are mainly DK x 2, Pally x 2, Druid, Shammy, Priest, Mage x 2 and a Warlock).

People will say "random loot is random" but it certainly seems more likely in my WoW experience (played since launch) that if a certain class isn't present in raid that it will have a higher chance of gear for said class to drop... I think sneaky Blizzard are up to something to keep you playing longer. Conspiracy theory maybe, but I think I'll start paying more attention to loot/classes in future just for my own peace of mind :)

Which would you presume more likely?
Let me help narrow this down a bit more: it is definitely not the second option.

I once waited for many months for a great healing trinket to drop from Gruul. Even when our raid force was working on Illidan and Archimonde I felt I could still benefit from that trinket. Run after run it "refused" to drop. And of course, it did drop on the "off day raids" for Alts when I wasn't present. By the time it actually dropped when I was there, nobody could believe I'd never had the chance to roll for it before. It had just dropped so many times, but never ever on the nights I was there.
