Faction changing at 120

I’ve been thinking of doing a faction change as I’ve never really played alliance side before but I have some questions first.

Firstly, is there anything that’ll be missed out if I swap at level 120? Like, does it reset all quests and story, letting me play through the whole alliance point of view? And what about reputations? Would it be better to switch a 110 character and go from there?

Lastly, if I switched over a character that has already started the horde reps, honourbound and Zandalari, will those convert to alliance versions or will it entirely reset?
