My guess is that some people use Auctioneer and other such addons that compute a % undercut, instead of simply undercutting by the least possible. It does generally net you a quicker sale, and you'd also be less likely to be further undercut quite so quickly since someone may wait to post their goods to the AH until your cheaper item sold. Just my 2c.
