Crafting - How to find what stats can roll?

I've been crafting some Archon Spaulders of Strength for my barb, trying to replace my Vile Wards. (In the past it only took me 10 - 20 tries to get shoulders that were better than the Vile Ward that my monk was using.)

None so far have had Crit Hit chance/damage or IAS. How do I find out what stats can possibly roll? If it's just what stats are possible on shoulders, bracers, etc., then where do I find that?

Some people seem to just know whether or not CC can come from gloves or shoulders, etc. I can't find this info on battle.net

Any help is appreciated.
